 500 g Chicken (cut into pieces)
 2 Onions (chopped)
 2 Tomatoes (chopped)
 2 tbsp Ginger-garlic paste
 1 tsp Red chili powder
 ½ tsp Turmeric powder
 1 tsp Coriander powder
 1 tsp Garam masala
 A few leaves Curry leaves
 3 tbsp Oil
 Salt To taste
 1 cup Water
 Fresh coriander (for garnish) A handful
Cook the Onions

Heat oil in a big pan. Add the chopped onions and cook until they turn light brown. This takes about 5 minutes.

Add Ginger-Garlic Paste

Add the ginger-garlic paste and stir for 2 minutes until it smells good.

Cook the Chicken

Put the chicken pieces into the pan and cook them until they turn light brown on all sides. This keeps the chicken juicy.

Add the Spices

Add turmeric powder, red chili powder, coriander powder, and salt. Mix everything well so the chicken gets all the flavors.

Add Tomatoes and Simmer

Add the chopped tomatoes and curry leaves. Cook until the tomatoes turn soft. Pour in the water, cover the pan, and let it cook for about 20 minutes or until the chicken is done.

Finish with Garam Masala

Sprinkle garam masala on top, stir, and cook for another 2 minutes. Your Andhra Chicken Curry is ready!
